Peach Cobbler in the microwave

Mmmm… peach cobbler… I don’t know about you but I really like peach cobbler. With peaches being so fresh this time of year its impossible not to make it! The sad thing though this year is that it is so hot and I don’t have AC. That means that I’ve had to get creative in getting my fix 🙂

The easiest approach in my house was the microwave. Hubby doesn’t like sharing his grill in my baking endeavors so the fight wasn’t worth this time. So the microwave it was, and it worked out really well!

Here are the ingredients and items you will need:

Peach(s)- I used one peach and it fit my bowl well and was all I need for me
Oats- I like crumb topping on my cobblers vs biscuits
Cinnamon and Nutmeg
Butter- I ended up not needing it as my peach was on the juicey side already
Brown Sugar
Flour

image1And now for the important part!

Step 1) Gather all the items together

Step 2) Cut up and skin peach. The way I did this and probable the way most people do it is slicing the peach into smaller wedges and then running the pairing knife under the skin and  slicing it off that way.

Step 3) Place the peaches in the bowl. Try not to eat to much of the peach while cutting it up 😀

Step 4) Assemble the topping! Now this part I didn’t measure, sorry! I just eyeballed it pretty well so the measurements I am guessing at.

1/2 cup Oats
1/4 tsp Cinnamon and Nutmeg
2 tbsp brown sugar
1 tbsp flour
(1/2 tbsp butter- I didn’t use butter on this recipe but if needed to make the topping moist thats about all you will need)

Mix them all together and distribute over the peaches trying to cover them entirely.

image4Step 5) Microwave for 2 minutes, checking after 1 minute, on 50% power. If you have a softer peach it might be done after the first minute so play with the time to get it your desired doneness!

Step 6) Enjoy it! Mine turned out really well and at this current weather rate is the only way I am going to get peach cobbler this summer.

Other variations to try: I haven’t done any of these yet but it’s worth sharing the ideas! If you try them or make any of your own variations feel to share! 

Grilled Peaches- Grill the peaches first before making the cobbler
Turbine Sugar- Instead of brown sugar use Turbine Sugar (aka Sugar in the Raw)
Cherries or Apricots- Add fresh cherries or apricots to the peaches
