Meyer Lemon Risotto

If you have never had Risotto you are missing! I had it for the first time at the beach a few weeks ago and fell in love. To top it all Meyer Lemon’s are in season right now. Which I have wanted to play with for some time. After a quick search I found a recipe that incorporated Meyer Lemons. I was in heaven! After prepping my ingredients and assistant chef Hubby; we got down to work.

It wasn’t very hard to make the risotto. Sauté the onions. Gently brown the rice. Add the water/chicken stock slowly. That is really as hard as it is. It is just time consuming! The stock part took 30-45 minutes to

complete and that doesn’t include the 5-10 minutes for the onions. This entire recipe is cooked on medium low heat. You also have to stir constantly while cooking the rice; if you don’t it will burn. So if you start to make this, make sure the kids/pets are occupied with something else; or have someone else in the house to tend to them. The recipe is vegetarian, so to get my carnivore of a Hubby to eat it, I made shrimp also.

It was yummy! The Meyer Lemon’s are very different to any a regular lemon. They have an orange taste also; which is to be expected since it’s a cross plant. I can’t wait to try more recipes with these lemons!
