Bountiful Basket Challenge 1/12

Have you hear of bountiful basket? If not, it’s a food coop run program that works with small farmers to provide healthy and helpful foods. Most of the products that come in the basket are from providers in the United States. The basket is 50% Fruit, 50% Vegetables, and the quality is very good. So why the challenge?

Here is a photo of the basket (including my lunch box addition) for you to see; and my messy counter.

The two brown bags are brussels Sprouts and sweet chilies. In total the food weighs 24 pounds and 8 oz. That weight does not include the grape tomatoes or pomegranates. That is a lot of food to eat before it goes bad! The best part though is that I only paid a grand total of $25.5o for all of it! At approximate market value I would have paid closer to $40 at the store. Pretty good deal right? Here’s the downside, you don’t know what you are getting till you pick it up. That  fact makes it more challenging to write a meal plan ahead of time.

The plan is as follows:
Eat the fruit, obivously. Might cook with some of the juices or bake with them. The rest is play by ear! I will post updates of my more creative solutions as they come!
